Roasted Beets with Caramelized Onions and Feta


1 pound beets
1 tablespoon oil
1 pound onions (sliced)
1/2 cup feta (crumbled)
1 tablespoon grainy mustard
2 tablespoons red wine vinegar
2 tablespoons olive oil

1. Wrap the beets in aluminum foil.
2. Bake the beets in a preheated 375F oven until soft, about 1 to 1.5 hours.
