- 2 zucchini, chopped (peeling is optional)
- 2 tablespoons extra virgin olive oil
- Juice of one lemon
- ¾ cup tahini
- 2 cloves garlic, peeled and crushed
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- Pinch of cayenne
- Salt to taste
Place all of the ingredients in a food processor and blend until smooth. Serve with crudités or use as you would traditional hummus.
